- 45ml Pineapple juice
- 30ml Settlers Spirits White Spiced Rum
- Fresh ginger
- Mint leaves
- Fresh lime
- Oceans Spirit Soda
- Fresh pineapple
- Brown sugar
Step 1 – Simmer the pineapple juice and ginger in a small saucepan for 5-10 minutes until reduced.
Step 2 – Make thecaramelised pineapple – dust pineapple slices in brown sugar and fry with a little butter until caramelised.
Step 3 – Muddle mint leaves lime juice and lime slices in a glass, the top with thepineapple-ginger juice. Add crushed ice, spiced rum and top with soda water.
Step 4 – Garnish with mint and caramelized pineapple.
